As Simon has shamed me in public here's the quick concept sketch I did and a template "for your homework".

Looking at it I should have had a bench seat and the perspective isn't quite right.  Wipers should be a separate motor on the fold flat screen.  That line by the rear wheel wouldn't be there if I had a rubber to hand: I was pondering a trailer type rear mudguard and something more skeletal but concluded a standard-ish looking lower body suited the 1950s style better.  Deep sills like a mini-moke and no doors.  Potential to add a tilt or hardtop and hang-on doors.

Sacrilege or a great way to get some life out of a spares car?  Lots of spares (if they really are any good) could come off it anyway...  Doors, boot, glass, wipers, interior.

The other argument is that Appias are not THAT rare. With values the way they are and a choice of good ones out there nobody is going to take a barn find and do the chrome, interior, make a proper job of the structure, paint. As such there are plenty out there waiting to roll out of a barn, have some love and imagination lavished on them, and go to work.

Aside from collecting the grapes wouldn't you love to be met at the station by that?   Can you imagine it at the market with the side folded down and samples piled up?
