I have recently bled the brakes on my S1. The car has a new master cylinder, new pipework, rebuilt servo and rebuilt callipers. The system is working but the point at which it works is very low in the pedal travel, say about 3-4 cms from the floor. Is this normal?

No it is not. I had this on another S1 recently. Suspect was servo trapping air. Lots of synchronised bleeding seemed to get a better pedal in the end and it braked normally. Just driven another S1 without servo and pedal is normal distance i.e. braking starts near the top....

one pushing the pedal and one opening the bleed nipple ( with appropriate pipe and container attached). When pedal gies to floor shut the bleed nipple release the pedal slowly and repeat....

Get a vacuum bleeder kit from your local motor factor.   https://www.sealey.co.uk/product/5637204666/1l-pneumatic-vacuum-brake-bleeder is what I use (and it can be got cheaper than this I am sure).
If the brakes pump up then there is air in the system.  If not then check the length of the pedal to servo operating rod.  If that is OK then consider taking off the master cylinder and checking the length of the rod between the servo and the master cylinder piston.     There is a post (by me) early on in the technical information thread that may help.
